Not Your Regular Grilled Cheese

The Bacon Grilled Cheese
Makes approximately 4 servings

Tired of the same old grilled cheese sandwich? Here's a simple twist sure to revive your enjoyment of this classic.

Ingredients. You can use 
any cheese you like, 

but chefs recommend cheese that
melts well such as 
Brie and Monterey Jack.

Ingredients
8 slices of sourdough bread
4 slices of Monterey pepper jack cheese
4 slices of medium sharp cheddar cheese
1 package of bacon
Butter for each slice
(grilled onions for those who like)

Instructions
1)  Cook bacon on a baking sheet according to package instructions.
2) When bacon is done, begin cooking your grilled cheese by adding a 1/2 tsp butter to a skillet on medium heat.

4) Add butter to the slices of bread on both sides, then add to the skillet.
5) Place the Monterey Jack cheese first, then the cheddar.  Top with the other piece of warm bread.
6) Turn over when the bread looks toasty and the cheese has melted.
7) Take the grilled cheese to a cutting board and add the cooked bacon and grilled onions for those who like.
